La Asociación de Sumilleres de Aragón ha convocado la tercera promoción del curso superior de sumiller profesional con el objetivo de capacitar a nuevos sumilleres a través de una formación rigurosa teórica y práctica.
El curso, acreditado por la Escuela de Hostelería de Barcelona, está dirigido a profesionales de la hostelería que deseen ampliar o completar su formación: maîtres, jefes de sala, camareros, etc., a profesionales de la distribución de vinos y demás productos agroalimentarios, profesionales de bodegas, así como a cualquier persona interesada en formarse como sumiller profesional.
El programa consta de 400 horas lectivas, distribuidas en módulos teórico prácticos, y sigue un proceso de aprendizaje basado en una metodología activa donde se combinan exposiciones teóricas con los talleres específicos de cata, servicio y comunicación con el cliente. Durante el curso se realizan actividades complementarias como visitas a bodegas, denominaciones de origen, conferencias y mesas redondas.
En la estructura del curso distinguimos dos grandes apartados:
- Programa lectivo, clases de teoría y práctica.
- Actividades complementarias y visitas a bodegas.
Clases magistrales a cargo de reputadas personalidades del mundo de la sumillería, y la gastronomía.

HISTORIA DEL CURSO
En el mes de mayo de 1994 se crea la Asociación de Sumilleres de Aragón, la más antigua junto con las de Asturias, Cataluña y la de Castilla León. Poco tiempo más tarde se realiza el curso de sumiller profesional que constituyó todo un hito en la época y considerado uno de los más completos realizados hasta ese momento en el ámbito nacional. Y más tarde se hizo la segunda promoción contando, igualmente, con los profesores y formadores más prestigiosos de España.
Fruto de esas dos promociones sale el turolenses Raúl Igual, mejor sumiller de España en 2010 y más tarde Advanced Sommelier of the Court of Master Sommelier’s Education Program. También candidato español al concurso ASI Mejor Sumiller del Mundo (Tokio 2013) y candidato español al concurso ASI Mejor Sumiller de Europa (Mónaco-San Remo 2013
Otro de los profesionales que salieron de las aulas aragonesas fue Manu Jiménez zaragozano y mejor sumiller de España en 2017 y con experiencias de trabajo en el exterior como su paso por Noruega y otros países en «casas» de gran prestigio.
Por su parte, el también zaragozano Guillermo Cruz, fue mejor sumiller de España en 2014 y posteriormente ha estado en los mejores restaurantes de España y liderando diferentes proyectos enológicos.
El viñador aragonés Fernando Mora es uno de los catorce nuevos Master of Wine (MW), nombrados por el Institute of Masters of Wine (IMW) con sede en Londres. Actualmente, son apenas 369 los profesionales que disponen de este prestigioso título en todo el mundo, trabajando en 29 países. Entre ellos enólogos, compradores de vino, periodistas, gestores de bodegas, distribuidores, educadores y académicos. Fernando reconoce que algunos de sus profesores fueron los sumilleres aragoneses como Jesús Solanas o Pepe Puyuelo.
Pilar Cavero creció profesionalmente en El Celler de Can Roca, Roca Moo y en Lavinia, templos del vino todos ellos y fue mejor sumiller de España 2013. Se da la circunstancia de que Pilar es también zaragozana y mantiene una estupenda relación con Aragón y sus colegas.
